PARSLEY

Ahh food. I kind of have a love-hate relationship with it. I love to eat it. All. The. Time. Buuuuut. There’s this thing. I have the beetis, a.k.a. diabetes. Thankfully, Type 1 (which is what I have) is very manageable today thanks to advanced medicine and technology. I even have a lovely insulin pump that gives me insulin whenever I want (muhahahaha). His name is Donald Pump. You can meet him later.

Anyway, all that to say, I gotta watch what I eat! So I do. With occasional indulgences.

To help maintain a healthy lifestyle, I became a vegetarian (no meat, poultry, fish, etc.) 4 years ago. That’s kind of turned into a pescetarian (eats fish) that dabbles in veganism. Yeah whatever. It’s complicated.

So, all that to say, you omnivores may not find much in the food section of this blog. But wait! Don’t leave yet. You may also find that cooking vegetarian or even vegan meals once a week can help:

  • lower your cholesterol
  • decrease your chances of heart disease
  • diminish your carbon footprint
  • save you money
  • make you feel great
